<li>Roughly crush peppercorns,garlic cloves, pick off thyme leaves from the stems and pick off rosemary leaves from the stems.</li>
<li>Season the tenderloin all over with the herbs and salt.</li>
<li>Make some small incisions in the meat and push in the chopped garlic cloves and peppercorns.Brush allover with olive oil. Wrap in cling film till ready to cook or at least 15 minutes.</li>
<li>Meanwhile heat up the grill to medium. Cook the tenderloin on a high flame to desired level-rough guide-4-5 mins for rare and 8-10 mins for well done. Rst for atleast 15 mins .</li>
<li>Slice across the grain and serve with char grilled vegetables.</li>
<li>For char grilled vegetables, cut the vegetables lengthwise to about 10-12cm. Season the vegetables with salt and pepper and rub olive oil all over. Char grill on high heat.</li>

<li>In a large bowl, coat the chicken pieces with with yogurt, garlic and ginger paste. Cover the bowl with cling and leave to marinate overnightin the refrigerator.</li>
<li>Preheat the oven to 180 deg C.</li>
<li>Heat the oil in a skillet. Shake the access marinade that's collected at the bottom of the bowl. Fry chicken thigh in the hot oil until they caramelize. Fluctutate the heat between high and medium depending on how quickly the oil browns. On medium-high heat, frying the thighs for 45 seconds on each side works just fine.</li>
<li>Line a baking tray with aluminium foil and lay the chicken thighs on it. Pour over the remaining marinade in the bowl. Sprinkle the kasoori methi, chilli flakes and salt, over the chicken. Drizzle some olive oil, as well,to help the roasting process along .</li>
<li>Roast for 40-45 minutes or till the juices run clear. You want chicken to be white when pierced at it's thickest part .</li>

<li>Soak rice for half an hour, Drain and keep aside.</li>
<li>Cut the half ginger into julienne and make paste of the rest. soak saffron in warm milk and keep aside. </li>
<li>Marinate mutton in yogurt, salt , turmeric powder and one tbsp each of ginger and garlice paste. Marinate for four hours in a refrigerator</li>
<li>Heat oil in a kadhai and fry half the sliced onions till brown. </li>
<li>Cook rice in salted boiling water along with cloves, cinnamon, green and black cardamoms and peppercorns till rice is almost cooked. </li>
<li>Heat ghee in a thick bottom pan. Add remaining sliced onions and green chillies.Cook until brown. Add remaining ginger-galric paste. </li>
<li>Add marinated mutton and cook on high heat for seven miutes.</li>
<li>Add coriander, cumin and red chilli powders. Mix and stir in three cups of water. On low heat and cook covered.</li>
<li>Add tomatoes, salt, half the garam masalapowder and fresh coriander leaves, Cook for fifteen minutes.</li>
<li>Preheat oven to 180 degrees celcius. Arrange half the quantity of cooked mutton in an oven proof dish and spread half the quantity of cooked rice on the top of mutton.</li>
<li>Sprinkle some garam masala powder, half inch julienned ginger, dissolved saffron and mint leaves. Spread the remainig mutton on the top of the rice, followed by cooked rice and repeat the earlier process with remaining quanitities of ginger, saffron milk, garam masalam mint leaves and butter.</li>
<li>Cover it with an aluminium foil and cook for twenty minutes. Serve hot.</li>

<li> Pat dry carrot and daikon and cucumber after washing.</li>
<li>To prepare the yam ,slice off the skin and then sing a special vegetable peeler, cut into long strips. Divide yam into two equal portions in two seperate bowls.</li>
<li>Using a short straw, pick up a few drops of red colouring and dye one bowl of yam red, Using another straw, dye theother bowl green. Leave to dry for a while.</li>
<li>Heat up some vegetable oil in wok, when the oil is heated enough turn it downto medium, add the red yam first and deep fry for three minutes. Remove and drain on a plate.Repeat for green yam.It is important that oil is not enough but not too hot else the yam will become too crispy.Set aside.</li>
<li>Arrange all the ingredients on a round plate. Totoasr sesame seeds,heat upadry pan. then add sesame seeds. Use a spatualla to stir the seeds evenly till seeds are golden brown. Don't over roast it , it just take a few minutes.</li>
<li>Arrange the ingredients in a seperate shallow dish. To prepare thesauce just add everything in a small bowl and mix it well till evenly dissolved.</li>

<li>Arrange the saladleaves, tomatoes and cucumber on fouor serving plates. Make the dressing by combining all the ingredients in a screw top jar. </li>
<li>Heat a nonstick frying pan over a high heat, add the tuna and fry for about 10 seconds on each side until seared.</li>

<li>Melt butter, then cool to room temperature. Combine sugar and buttermilk in a large bowl. </li>
<li>Combine the semolina, vanilla, baking powder and baking soda in a seperate bowl. </li>
<li>Add semolina mixture, mix well, then add melted butter, and mix well.</li>
<li>Spray an 11*7 inch pan with cooking spray , pur in the mixture. You may also use 13*9 inch pan, bake for 25 minutes instead of 30.</li>
<li>Let sit for 20 minutes. Bake for 30 minutes, pour sugar syrup over it while still warm. This is usually served with tea or coffee.</li>

<li>In a large heavy saucepan overmedium heat, brown lentils in 2 tbsp oil for about 5 minutes, stir occasionally.</li>
<li>Add three cups of boiling stock, salt and pepper. Cook uncovered over medium heat for 10 minutes. </li>

<li>Cut the potatoes in half, season with salt and pepper and a drizzle of olive oil. Place them on a baking tray and roast in the oven till golden brown and tender. Allow to cool.</li>
<li> Cut the onions into jullennes (thin strips) and caramelise in a non-stick pan.</li>
<li> Wash the celery stalks well under cold water and cut.</li>
<li>In a mixing bowl, mix the mayonnaise and mustard. Add the potatoes, caramelised onion and celery and mix well to ensure the potatoes evenly coated with dressing.</li>

<li> Cut the mixed peel, sugared ash gourd, sultanas, raisins and walnuts into small pieces.</li>
<li>Add 1/4 bottle rum and keep the mix in a seated container for a few days. However, the longer you keep, the better it tastes.</li>
<li>Take 150 gms of sugar in a pan and heat over a medium flame. Allow the sugar to melt and turn brown. Stir and allow the sugar cook until it starts to smoke and turn black. Add 1/4 cup of hot water to form thick treacle. Set aside to cool.</li>
<li>Beat the sugar and eggs till the mixture turns white. Add butter and oil and stir till the mixture turns fluffy. Add the sifted all purpose flour, baking powder, semolina, marmalade, spice powder, burnt sugar and essence to the mixture and mix all the ingredients well by hands.</li>
<li>Then add the floured fruit, a little at a time and fold in by hand.</li>
<li>Put the cake in tins lined with brown paper smeard with butter.</li>
<li>Bake in a pre-heated oven at 350 degree for about one hour until it starts to leave the side.</li>

<li>Season the inside and outside of the chickenwith salt and pepper. Stuff the cavity with lemon, garlic and half of the rosemary and thyme. </li>
<li>Rub 100 gm of butter onto the skin of chicken. </li>
<li>Place the chicken in a roasting pan and roast for approximately 45 minutes, or until skin is golden colured and the juice run clear. </li>
<li>Make sure to baste frequently with the drippings to keep the chicken moist and rotate the pan every 20 minutes or so to ensure a crispy golden skin. </li>

<li> Rinse the split peas in a sieve under the running tap. Boil peas, gammon and bacon. Skim off the floating scum. Pour out the water, rinse peas (and meat) again and put them back on the fire with clean water.</li>
<li>Mean-while, prepare the vegetables. Cut and rinse them. Add the vegetables to the pan and let them simmer until the peas are done.</li>
<li>Take the meat out of the pan , remove rind and bones, and cut in small pieces. Return the meat to the pan. </li>
<li> Wash the springs of celery and chop or cut the leaves. </li>
<li>Twenty minutes before the end of cooking, and the whole smoked sausage and the celery. </li>
<li>Finish off with pepper and salt. </li>
<li>The pea soup is still fairly liquid. Let it cool completly and reheat it the next day, or freeze in portions. When you want to freeze the soup,add the smoked sausage when reheating , or divide the sausage in equal quantities over the portions. Take care when you reheat the soup to do this very gently and stirring frequently, to prevent a thick balck crust forming on the bottom off the pan. To heat smaller amounts, use the microwave. </li>

<li> Heat oil in a frying pan and saute the onions until soft and golden. Add the garlic and ginger and cook for a minute until aromas are released.</li>
<li>Add the spices and fry until you can really smell them. Bung in the tuna and mix it in letting it heat up gently.</li>
<li>Put the tuna mixture in with the mashed potatoes and mix well.</li>
<li>Add the lemon juice, fresh coriander and green chillies, if using, and mix thoroughly. Taste the mixture at this point, it should be tangy from the lemon and perfumed with coriander. Adjust if required along with seasoning.</li>
<li>Roll into patties, coat in beaten egg and roll in breadcrumbs. Can even be double coated which gives a fantastic crunch.</li>
<li>Fry in oil until evenly golden brown.</li>

<li>Pour water and knead into a soft dough. </li>
<li>Heat a tawa and melt the ghee. Now take out equal portions of the dough. Shape and flatten them to make pranthas. Spread ghee on each side. Cook the pranthas on both sides till they turn golden brown. </li>

<li> Mix the water and sugar for the caramel in a saucepan Place it over medium heat.</li>
<li>Stir continously until the sugar melts into a liquid. Once the sugar has melted and is turning to dark brown, proceed with caution, since you need to add butter at this stage.</li>
<li> As soon as the caramel until it is completely melted. Remove the pan from heat and slowly por the cream into caramel. Again, be careful because the mixture will once again bubble up feriously. </li>
<li> Whisk until all of the cream has been incorporated and you have smooth sauce. Add sea salt and mix nicely</li>
<li> Now spread this salty caramel sauce on the spicy prantha and serve hot.</li>

<li>Preheat a chargrill or frying pan over high heat. Burn orange halves until flesh has blackened. Squeeze through a fine sieve.</li>
<li>Heat half of the oil in a saucepan over medium heat. Cook eschalots for 1 minute, stirring, then add carrots, star anise and coriander seeds, and cook for a further 3 minutes, stirring regularly. Add orange juice and vinegar, cook for 2 minutes, then turn off the heat. Set aside for 1 minute to cool slightly. </li>
<li>Drizzle remaining oil in a deep tray, then coat fish in oil, arranging in tray in a single layer. Pour over escabeche mixture, and set aside for 10 minutes or until just cooked. </li>
<li>Meanwhile, make Kilpatrick mayonnaise. </li>
<li>To serve, carefully remove fish from tray and place on plates. Scatter with carrots and eschalots. Spoon or squeeze oyster mayonnaise onto fish and plate. </li>
<li>Garnish with saltbush, wild rice and mizuna, and drizzle with cooking liquor. </li>

<li>Coarsely crush peppercorns then press pepper evenly onto both sides of steaks. </li>
<li>Heat a heavy skillet over high heat until hot, then melt the butter and olive oil, swirling skillet, and sauté steaks until brown on medium heat, turning over once.Once done, remove the steaks to a plate, tent with foil and set aside. </li>
<li>In another pan add cognac to hot pan. Allow alcohol to burn off, about 1 minute, then add stock. Cook until reduced by half. Add cream and cook, stirring occasionally, until thick, 3–5 minutes. Season with salt and pour over steaks</li>

<li> Trim the knuckles--make them look neat exposing the bone and season it with salt and pepper. keep it aside for 30 minutes.</li>
<li>Peel and chop celeriac and carrot.</li>
<li>Heat oil in a large pot (big enough to hold all the knuckles and vegetables) and saute the meat till it get light brown from every side. </li>
<li>Remove them and fry chopped onions, celeriac and carrot in the same oil..</li>
<li>Add garlic, orange rind, thyme, tomatoes, stock and wine. Bring to boil and add meat.</li>
<li>Cover and place it in the oven at 150 degree celsius for at least 2.30 hours. The longer the stew simmers, the more succulent the dish .</li>
<li>The lamb should be coming away from the bone when it is ready.</li>
<li>Add the molasses sugar and soya sauce. Coat it properly and roast in the oven for another 20 minutes.</li>
</ol>
