Yu Sheng

An Authentic Chinese Yu Sheng Recipe

The Chinese new year is all about getting friends and family together. Yu Sheng or raw fish salad denotes an abudance of wealth and long life. It is said "the higher your salad istossed,the more prosperity will come your way in the ahead time. Yu Sheng is one of the must have dishes on new year celebrations. Here is the recipe to try out.

  • 1 Carrot Skin Peeled
  • 1 White Radish Skin Peeled
  • 1 Cucumber
  • 2 Tbsp Japenese Red Pickled Ginger
  • 1 Packet Of Pok Chui Crackers
  • Red And Green Yam(Wear Disposable Gloves When Handling Yam)
  • Red And Green Food Colouring
  • Vegetable Oil For Deep Frying
  • 1 Tbsp Roasted Sesame Seeds
  • 1 Tbsp Roasted Peanuts, Chopped Finely
  • 1 Tsp Chinese Five Spice Powder
  • 1 Tsp Cinnamon Powder
  • A Small Dash Of Chinese White Ground Pepper
  • 1 Tbsp Good Quality Of Extra Virgin Oil
  • 2 And 1/2 Tbsp Chinese Plum Sauce
  • 1 Tsp Sesame Oil
  • A Tbsp Hot Waterto Achieve The Consistency Of Sauce To Your Liking , Raw Fish

Method To Prepare

  1. Pat dry carrot and daikon and cucumber after washing.
  2. To prepare the yam ,slice off the skin and then sing a special vegetable peeler, cut into long strips. Divide yam into two equal portions in two seperate bowls.
  3. Using a short straw, pick up a few drops of red colouring and dye one bowl of yam red, Using another straw, dye theother bowl green. Leave to dry for a while.
  4. Heat up some vegetable oil in wok, when the oil is heated enough turn it downto medium, add the red yam first and deep fry for three minutes. Remove and drain on a plate.Repeat for green yam.It is important that oil is not enough but not too hot else the yam will become too crispy.Set aside.
  5. Arrange all the ingredients on a round plate. Totoasr sesame seeds,heat upadry pan. then add sesame seeds. Use a spatualla to stir the seeds evenly till seeds are golden brown. Don't over roast it , it just take a few minutes.
  6. Arrange the ingredients in a seperate shallow dish. To prepare thesauce just add everything in a small bowl and mix it well till evenly dissolved.
  7. Arrange the raw fish in a seperate plate. Toss it up and high.
