Chicken Kadhai

An Authentic Chicken Kadhai Recipe

Chicken Kadhai is a North Indian Cuisine. When cooked with Indian herbs and spices; it guarntees to please your taste buds. It's gravy when made with local herbs, it tastes juicy with distinct flavor. AH! Even the thought of Chicken Kadhai fills my mouth with its scrupulous taste. Positive part of this dish is you can add as many as variety and quantity of vegetables. You can replace chicken with cheese and make it kadhai panner :).Many people prefer to buy the Chicken Kadhai ready made curry or paste. I prefer the home made one.   • Chicken 1 kg
  • Coriander Seeds: 2 Tsp
  • Cumin Seeds: 2 Tsp
  • Black Peppercorns(whole):6
  • Dry Red Chilies:6
  • Ginger: 2-inch Piece
  • Garlic: 15 Cloves
  • Ghee: 2 Tbsp
  • Oil: 2 Tbsp
  • Onion(Chopped): 1
  • Tomatoes(chopped):4
  • Salt To Taste
  • Fresh Coriander Leaves(Chopped): 2 Tbsp

Method To Prepare

  1. Dry roast corianderseeds, cumin seeds an peppercons and grind to a coarse powder.
  2. .Grind red chillies, ginger and garlic to a fine paste.
  3. Now heat ghee in a kadhai, add onion and saute till lightly browned.
  4. Add half of the coarsely ground spice powder and red chilli-ginger-garlic paste and continue to saute for four minutes.
  5. Add tomatoes and salt and continue to cook tillthe tomatoes become soft.
  6. Put in the chicken pieces and stir.
  7. Add coriander leaves and the remaining coarsely ground spice powder and mix well.
  8. Pour half a cup of water. Cover and cook on medium heat till the chicken is done.
You can serve it with poppadums or fluffy rice. Garnish with a sprinkle of coriander leaves and a few lemon wedges for squeezing over.
