Spanish Omelet/ Tortilla Española

An Authentic Spanish Omelet/ Tortilla española Recipe

This deliciously tasty dish not only provides a healthy array of vegetables and can be used for breakfast, brunch, or any meal but alos satisfy your taste buds. Serve your Spanish Omelet/ Tortilla española with fresh fruit salad, green leaf lettuce and cucumber salad or a whole grain dinner roll. I love the crispiness of cheese and eggs on the outer and softness of onion and potatoes inside.

  • 5 Small Potatoes,Peeled And Cubed
  • 5 – 7 Tablespoons Of Olive Oil
  • 1/2 Medium Onion, Minced
  • 1 Small Zucchini, Sliced
  • 1 1/2 Cups Green/Red Peppers, Sliced Thin
  • 5 Medium Mushrooms, Sliced
  • 3 Whole Eggs, Beaten
  • 5 Egg Whites, Beaten
  • Pepper And Garlic Salt With Herbs, To Taste
  • 3 Ounces Shredded Part-skim Mozzarella Cheese
  • 1 Tbsp. Low-fat Parmesan Cheese

Method To Prepare

  1. On a low to medium heat soften the onions for about 5 mins. Don’t let them colour or cook much because they’re going to cook further.
  2. Add the cubed potatoes and mix well with the onions.
  3. Add Salt.Potatoes need more salt in this dish. So add it little more than usual.
  4. Add black or white pepper. Mix everything again.
  5. Cover the pan and put on a low heat for good 15-20 mins. Stir it occasionaly to make sure the potatoes are not burning.
  6. Make sure thw potatoes are tender.
  7. Crack and stir your eggs in a bowl.Using a fork mix the eggs well. Add well-beaten eggs to the mixture.
  8. Make sure the potatoes are completely surrounded by the eggs. Let the flame be on low.
  9. Use fork or spoon to make the egg move around the potaotes and settle in the bottom of the pan.
  10. Let it cook on low flame for 7-8 min. Once you see it solid throughout,it's time to flip the omelete.Put a large plate over the pan with your hand holding on to the plate flip the pan over.
  11. Slide the omelete back on to the pan and let it cook for a couple of minutes.
  12. Spread Mozzarella Cheese and Parmesan Cheese and grill it for a minute or two.
  13. It's ready to serve now.

    Tips

  • Make sure the potatoes are shallow fried and not deep fried. Remove the excess oil from potatoes and onion before adding eggs.
  • Before adding your eggs the potatoes should be soft but not collapsed into a mash. You can see how easily a fork goes through them when soft.
  • If the potatoes are well seasoned you don’t need to add any further seasoning to the eggs. Taste the potatoes before adding eggs. If you want to add any thing this is the best time to add flavour or season to your dish.
  • You have to be generous enough with the olive oil. Else your tortilla will stick to the pan or even get burn.
  • While flipping the tortilla make sure it’s not liquid runny.
  • In case you are a diabetic ot have any cholesterol issues . You can skip the cheese part.
  • Plantains or corn can be used in place of the potatoes.
  • Remove omelet from oven let it cool for few minutes, cut into pieces and Enjoy :)
