Tea Smoked Chicken

An Authentic Tea Smoked Chicken Recipe

Tea Smoked Chicken is a very famous Asian dish, but famous almost every part of this planet. Smoked tea adds a distinct flavor to chicken that is sweet and pungent. The smoky flavor is succulent,subtle and delicious. With very few ingredients this recipe is easy to work on, yet the result is aromatic. You can use different flavors of tea like jasmine tea or ginger tea etc. Tea Smoked Chicken is not neither grilled nor roasted, it's actually steamed which make it much healthier. It is light at your heart , light at your waist.

  • Peppercorns:1 Tbsp
  • Coarse Salt:2 1/2 Tsp
  • Chicken(Whole With Skin On):1
  • Loose Tea:10 Gm
  • Brown Sugra:2 Tbsp
  • Asian Sesame Oil:2 Tbsp

Method To Prepare

  1. Toast peppercorns in a small skillet for five minutes, shaking pan to avoid burning. Let them cool down and then crush them with a spice grinder and grind the salt.
  2. Rub the peppercorn mixture on the inside and outside of the chicken and place it(breast side up) in a large steamer set over boiling water.
  3. Cook for 25 minutes or until chicken is just cooked.
  4. Meanwhile, prepare the wok for smoking-- Cover the inside of wok and the lid with aluminium foil.
  5. Add tea and brown sugar to wok and combine. Place a rack inside and put the chicken on it, breast side up.
  6. Place covered wok over high heat and cook chicken for about six minutes. Flip chickenand smoke another six minutes.
  7. Remove chicken from heat and let it sit, covered, for 15 minutes. Brush chicken lightly with oil. Slice and Serve.
Serve it with soy-ginger sauce, salad with coriander and pickled red onions and roasted tomatoes as an accompaniment :)
