An Authentic Veggie Frittata with Bacon and Cheese Recipe

Frittatas are an Italian-style omelette, baked in a skillet, enriched with various ingredients such as potatoes, onions, fresh spinach, onions, garlic, Parmesan and goat cheese, and sun-dried tomatoes, bacon and cheddar cheese drizzled with a cilantro chile sauce. You can add any thing you wish.A hearty veggie-frittata that is good for any meal of the day as it's a very good way to get a variety of nutrients in one take. Eggs and cheese are a great source of calcium and protein. Mix in veggies to get an antioxidant kick as well as fiber. Fat-free cheese is a healthy alternative, especially because there is fat in the eggs and sausage.

  • 8 Eggs
  • 1/2 Cup Whole Milk
  • 1/2 Lb Fresh Spinach, Rinsed, Dried And Torn Into Roughly 1-inch Pieces
  • 1 Green Bell Pepper, Chopped
  • 3 Buttons Of Mushrooms- Chopped
  • 8 Slices Bacon
  • 1/2 Large Onion, Peeled And Diced
  • 1 Cup Grated Cheddar Cheese
  • 1/8 Teaspoon Freshly Ground Black Pepper
  • 1/4 Cup Fat-free Half-and-half
  • Kosher salt, to taste

Method To Prepare

  1. Preheat Oven.
  2. Cook the bacon over medium-low heat it's crispy and dry. When it's cool, roughly chop/crumble it up.
  3. Add about 2 Tbsp of fat. Add onions, mushrooms and bell pepper and sauté for 3 minutes.
  4. Turn off the heat and add the chopped spinach pieces and stir until the leaves are fully wilted.
  5. In another bowl,beat the eggs until nice frothy. Add the milk and stir until properly combined. Add Kosher salt.
  6. Now pour this egg mixture into the skillet, and sprinkle the chopped bacon pieces in as well. Stir it well so that ingredients mix evenly.
  7. Turn the heat on medium and cook for about 5 minutes let the egg begins to set.
  8. Turn off the heat and Add the grated cheese, sprinkling it evenly across the top, and then transfer the skillet to the oven. Bake 10 to 15 minutes or until the eggs are fully cooked.

    Tips

  • You can use oregano,chilli flakes or any other sauce to enhance the taste.
  • You can also use canned chickpeas and rosemary .
  • Combine eggs with other ingredients in a deep bowl, not the pan. Then add back to the pan for baking
  • Cook the vegetables finely before adding the eggs. If the vegetables remain raw and watery, You have to bake it more and in this way you may end up with over cooked eggs.
  • Before baking stir the mixture well so that all the ingredients are evenly distributed
  • Add as many types of veggies you want but maintain the eggs-veggies-bacon ratio.
