Mango Cheese Cake

An Authentic Mango Cheese Cake Recipe

Mango Cheese Cake is everyone's fav. Last time when i made for my husband's friends ... guess what they didn't leave a single bite for me . ARRRHH!!! :) Though, next time i am going save one for myself, before i serve it to others. This recipe of Mango Cheese Cake is extremely simple. Those who avoid eggs in desserts, this recipe is one for them. Mango cheese cake is the simplest to make unlike other fudgy cakes which are quite equivalent to rocket science. Kidding... The cream melts in your mouth and biscuits provide a little cruchiness. I have added a little coconut too, for more creamy flavor. Check out this recipe.

  • Cream cheese - 1 block (250gm) ( You can use 2 cups of cottage cheese too)
  • Cream - 170 gm (Nestle would be great)
  • Powdered Sugar - Half a cup
  • Mango Puree - 3/4 of a cup
  • Gelatine - 1 Tbsp( In case u don't have gelatine powder, use 6 gelatine leaves. Soak them in cold water. Squeeze the juice out of it and add 1/4 cup of water)
  • Hot Water - 1/4 cup
  • Graham Cracker Crumbs - 1 cup (If you want thicker base add more)
  • Digestive Biscuits 8 - 10
  • Unsalted Butter, Melted - 75 gm (about 1/3 of a cup)
  • Skimmed Milk Yogurt( hung curd) - 1 1/2 cups
  • Coconut Flavoring - 1 tsp(optional)
  • Mango Jelly - 1 tbsp

Method To Prepare

  1. Crush biscuits andgraham crackers in a food processor to a coarse powder .Put the mixture into a bowl. Add melted butter and mix well.
  2. Now Put this mixture at the base of cake pan. Refrigerate it to let it set, while preparing rest of the cheese cake.
  3. Now Mix the cream cheese, cream, coconut (if using) and sugar in another bowl. Mix all well with the help of a spoon.
  4. Mix cornflour in a little milk. Heat it a little. Stir continuously till the mixture thickens. Set aside.
  5. Mix gelatin in a little water and heat in the microwave for a minute. Remove it and keep aside. Allow to cool.
  6. Add mango pulp to cream cheese batter. Mix properly.
  7. Add cornflour and gelatin mixture to the mango pulp mixture. Blend again on a slow speed until incorporated properly.
  8. Now spread the the puree on already prepared biscuit layer. Bake it for 1 hr and 10 mins in the preheated oven )If the cake still seems uncooked, then bake for another 10 mins).Or refrigerate it for another 3 hours.
  9. If the cake still seems uncooked, then bake for another 10 mins.
  10. Decorate it with slices of mango, mango jelly and thickened cream and some strawberries. ( To prepare jelly- boil a quater cup water and dissolve mango jelly. Put a layer of this mango jelly over the cake and let it chill for another 30 mins).
  11. Cut the cake with sharp knife dipped in hot water for smooth cutting.
