Egyptian Koshary

An Authentic Koshary Recipe

I have a certain fondness for pasta and rice. I can eat them both every single day, with different versions of course. Nothing can surpass this delicious combination of both for me. I am all over it!! Koshary is an Egyptian dish made with pasta, rice and lentils, with lots of home made sauce.Check out this lip smacking and healthy recipe of Koshary.

  • 2 Tbsp Oil
  • 1 1/4 Cups Lentils
  • 3 Cups Boiling Water
  • 1 Tsp Salt
  • 1 Dash Pepper
  • 1 1/2 Cup Boiling Stock

Ingredients For The Sauce

  • 3/4 Cup Tomato Paste
  • 3 Cup Tomato Juice
  • 1 Green Pepper Chopped
  • 1/2 Cup Celery Leaves chopped
  • 1 Tbsp Sugar
  • 1/2 Tsp Salt
  • 1 Tsp Cumin
  • 1/4 Tsp Cayenne Pepper

Ingredients For The Pasta

  • 1 Cup Boiled Pasta, Small Shell Or Elbow Macroni Is Best. Addoilive Oil And Salt To Make It Tasty

Method To Prepare

  1. In a large heavy saucepan overmedium heat, brown lentils in 2 tbsp oil for about 5 minutes, stir occasionally.
  2. Add three cups of boiling stock, salt and pepper. Cook uncovered over medium heat for 10 minutes.
  3. Stir in rice and 1 cup of stock. Bring to boil, reduce heat and simmer for 25 minutes.
  4. MEanwhile,heat all the sauce ingredients together in a medium saucepan. Bring to boil, reduce heat, cover and simmer for 20-30 minutes.
  5. To make brownedonions,heat oil ina small skillet. Sauce onions and garlic over medium heat till browned.
  6. To serve,put the macaroni, rice and lentil mixture on a platter, pour tomato sauce over it and top with browned onion.
