I have a certain fondness for pasta and rice. I can eat them both every single day, with different versions of course. Nothing can surpass this delicious combination of both for me. - 2 Tbsp Oil
- 1 1/4 Cups Lentils
- 3 Cups Boiling Water
- 1 Tsp Salt
- 1 Dash Pepper
- 1 1/2 Cup Boiling Stock
- 3/4 Cup Tomato Paste
- 3 Cup Tomato Juice
- 1 Green Pepper Chopped
- 1/2 Cup Celery Leaves chopped
- 1 Tbsp Sugar
- 1/2 Tsp Salt
- 1 Tsp Cumin
- 1/4 Tsp Cayenne Pepper
- 1 Cup Boiled Pasta, Small Shell Or Elbow Macroni Is Best. Addoilive Oil And Salt To Make It Tasty
- In a large heavy saucepan overmedium heat, brown lentils in 2 tbsp oil for about 5 minutes, stir occasionally.
- Add three cups of boiling stock, salt and pepper. Cook uncovered over medium heat for 10 minutes.
- Stir in rice and 1 cup of stock. Bring to boil, reduce heat and simmer for 25 minutes.
- MEanwhile,heat all the sauce ingredients together in a medium saucepan. Bring to boil, reduce heat, cover and simmer for 20-30 minutes.
- To make brownedonions,heat oil ina small skillet. Sauce onions and garlic over medium heat till browned.
- To serve,put the macaroni, rice and lentil mixture on a platter, pour tomato sauce over it and top with browned onion.
