Baby Potato Salad With Celery And Walnuts is a simple Indian healthy salad recipe, best for festive season. Ready in a jiffy and you can enjoy it with your family any time.
- 2 Kg Baby Potatoes
- 200 Gm Onion
- Celery Stalk 50 Gm
- Walnuts 50 Gm
- Mayonnaise 2 Tbsp
- Kashundi Mustard 1 Tbsp
- Preheat oven to 200c.
- Cut the potatoes in half, season with salt and pepper and a drizzle of olive oil. Place them on a baking tray and roast in the oven till golden brown and tender. Allow to cool.
- Cut the onions into jullennes (thin strips) and caramelise in a non-stick pan.
- Wash the celery stalks well under cold water and cut.
- In a mixing bowl, mix the mayonnaise and mustard. Add the potatoes, caramelised onion and celery and mix well to ensure the potatoes evenly coated with dressing.
- Garnish with walnuts.
