Baby Potato Salad With Celery And Walnuts is a simple Indian healthy salad recipe, best for festive season. Ready in a jiffy and you can enjoy it with your family any time.

  • 2 Kg Baby Potatoes
  • 200 Gm Onion
  • Celery Stalk 50 Gm
  • Walnuts 50 Gm
  • Mayonnaise 2 Tbsp
  • Kashundi Mustard 1 Tbsp

Method To Prepare

  1. Preheat oven to 200c.
  2. Cut the potatoes in half, season with salt and pepper and a drizzle of olive oil. Place them on a baking tray and roast in the oven till golden brown and tender. Allow to cool.
  3. Cut the onions into jullennes (thin strips) and caramelise in a non-stick pan.
  4. Wash the celery stalks well under cold water and cut.
  5. In a mixing bowl, mix the mayonnaise and mustard. Add the potatoes, caramelised onion and celery and mix well to ensure the potatoes evenly coated with dressing.
  6. Garnish with walnuts.
