Ingredients For Lemon Herb Roast Chicken

  • 1 N 1/2 Kg Chicken
  • 1 Bunch Of Fresh Thyme
  • 1 Bunch Fresh Rosemary
  • 100gm Butter
  • 1 Lemon Cut In Half, Cut in Half Horizontally
  • 1 Head Of Garlic
  • Salt To Taste

Method To Prepare Lemon Herb Roast Chicken

  1. Preheat oven to 200c .
  2. Season the inside and outside of the chickenwith salt and pepper. Stuff the cavity with lemon, garlic and half of the rosemary and thyme.
  3. Rub 100 gm of butter onto the skin of chicken.
  4. Place the chicken in a roasting pan and roast for approximately 45 minutes, or until skin is golden colured and the juice run clear.
  5. Make sure to baste frequently with the drippings to keep the chicken moist and rotate the pan every 20 minutes or so to ensure a crispy golden skin.
