Christmas Plum Cake

An Authentic Christmas Plum Cake Recipe

Plum Cake adds sweetness to lovely christmas eve. Food is integral part of celebrations. And how can one forget desserts specially cakes at the family feasts. I have seen my mother preparing this yummi-licious plum cake on every christmas. So i named this plum cake "Christmas Plum Cake". Check out this simple recipe and surprise your loved one this Christmas.

Note Down The Ingredients

  • Sugar - 1 Kg
  • Refined Oil- 1/2 Kg
  • All Purpose Flour- 1 Kg
  • Mixed Fruits(Also Known As Mixed Peel) Minced Into Small Pieces- 1 Kg
  • Sugared Ash Gourd- 1 Kg
  • Raisins- 1/4 Kg
  • Walnut Or Cashew Nuts Cuts Into Small Pieces- 1/2 Kg
  • Marmalade - 1/2 Kg
  • Spice Powder- 1 Teaspoon
  • Butter- 1 Kg
  • Eggs-22
  • Semolina- 100gm
  • Large Dried Plums(Sultanas) - 1/4 Kg
  • Rum - 1/4 bottle
  • Baking Powder- 2 Tablespoon
  • Almond With Vanilla Essence To Taste

Method To Prepare

  1. Cut the mixed peel, sugared ash gourd, sultanas, raisins and walnuts into small pieces.
  2. Add 1/4 bottle rum and keep the mix in a seated container for a few days. However, the longer you keep, the better it tastes.
  3. Take 150 gms of sugar in a pan and heat over a medium flame. Allow the sugar to melt and turn brown. Stir and allow the sugar cook until it starts to smoke and turn black. Add 1/4 cup of hot water to form thick treacle. Set aside to cool.
  4. Beat the sugar and eggs till the mixture turns white. Add butter and oil and stir till the mixture turns fluffy. Add the sifted all purpose flour, baking powder, semolina, marmalade, spice powder, burnt sugar and essence to the mixture and mix all the ingredients well by hands.
  5. Then add the floured fruit, a little at a time and fold in by hand.
  6. Put the cake in tins lined with brown paper smeard with butter.
  7. Bake in a pre-heated oven at 350 degree for about one hour until it starts to leave the side.

    Tips

  • Before adding to the cake make sure you dust the peel with half the flour so that the fruit is not sticky and pieces are seprated from each other. Then keep aside .
  • To test if the cake is cooked, insert a toothpick into the cake. If it comes out clean,the cake's has been baked perfectly. .
Cool and Serve To The Guests.
