Schezwan Fried Rice

An Authentic Chinese Schezwan Fried Rice Recipe

Schezwan Fried Rice is a delicious blend of spicy flavors and sauces. Veg Schezwan Fried Rice Recipe is ultimately easy and healthy. Ingredients For Schezwan Sauce: Makes about 2 tbsp

  • 6-8 Dried Red Chilies Soak It In Lukewarm Water For 5 Minutes For Smoky Effect
  • 4-5 Large Cloves Of Garlic, Chopped
  • 1 Inch Peeled Ginger, Chopped
  • 1 Tsp Vinegar
  • 1tsp Corn-flour
  • Soya Sauce, Chili Sauce And Salt According To Taste

Method To Cook Schezwan Sauce

  1. Heat the oil in a wok. Add 4-5 whole red chilies and saute over high heat till they darken a bit.
  2. Add the onions, garlic and ginger paste and stir-fry over high heat till glossy.
  3. Add the corn-flour mixture and bring to a boil.
  4. Lower the heat and add the chili powder, vinegar, soya sauce, chili sauce and salt and mix well.
  5. Cook for another 2 minutes.

  • 2 Cups Chinese Rice
  • 1 Tsp Chopped Garlic Or Paste
  • 1 Tsp Chopped Ginger Or Paste
  • 2 Tsp Celery Washed And Chopped
  • 1 Cup Sliced And Diced Mixed Vegetables
  • Vegetable Used: Onion, Carrot, Beans, Boiled Potatoes, Baby Corn, Capsicum, Peas, Sweet Corn, Red/Yellow Bell Pepper, Shredded Cabbage
  • 2-3 Green Chilies
  • 2 Tbsp Schezwan Sauce
  • 1/2 Cup Bean Sprouts
  • Coriander Leaves For Garnishing
  • 2 Tbsp Oil
  • Salt To Taste
  • Sauces Used: Soya Sauce, Chili Sauce, Sweet Chili Sauce, Tomato Sauce, Worcester Sauce

Method To Prepare Chicken Curry

  1. Steam the rice with salt and 1 tsp oil for 10 minutes. Drain the extra water after it is well cooked.
  2. Heat the oil; add the garlic and saute till it turns golden in color.
  3. Add the celery and chopped mix vegetables and stir fry for 2 to 3 minutes. Make sure the veggies are not over cooked, but are half cooked to retain the color and crunch.
  4. Add the above mentioned sauces along with salt and pepper. Mix it well.
  5. Add the steamed rice and toss it well with the veggies and sauce mixture.
  6. Stir fry them for 3-4 minutes. Make sure rice is now well coated with the sauce.
  7. Add the schezwan sauce and cook for another minute.
  8. Turn off the heat and sprinkle coriander leaves.
Schezwan Sauce itself is very spicy. If you want it to more spicy you can add green chilly. Serve hot with manchurian or yogurt
